Bake your own ….BAKED rice

Preparation Time: 30 mins

Cooking Time: 40 mins

Serving for 2 – 4 persons

Ingredients

20 g shredded Cheddar cheese

20 g shredded Parmesan cheese

20 g shredded Mozzarella cheese

2 – 3 cups of cooked rice

2 Italian sausages (cut into slices)

salt and pepper to taste

2 cloves garlic (finely chopped)

1 tsp of Italian Herbs

150 g sliced chicken thigh

Method

1. Marinate chicken thigh with 1 tsp of light soy sauce, pepper to taste, 1 tsp corn starch and garlic for 20 mins.

2. Spread the cooked rice on the baking casserole dish.

3. Add toppings, chicken mixture, sausages. Add the cheese on top of the toppings. Beat an egg and glaze on top of the cheese.

4. Heat the oven and bake for 30 – 40 mins. Cover the top with the aluminium foil if the cheese turns too dark during baking.

Meshed Potato….ala yummy

Preparation Time: 10 mins

Cooking Time: 40 mins

Serving for 2 – 4 persons

Ingredients

4 large potatoes

10g – 20g butter (depending on the texture of your potatoes)

2 tsp salt

Pepper to taste

Method

1. Cut the centre of the potatoes’ skin. This will enable easy removable when cooked

2. Heat water and add potatoes and cook for about 40 mins. To check if cooked, used a fork or toothpick to prick

3. After potatoes are cooked, soaked in ice cold water to remove the skin

4. Use a fork to mesh the potatoes, add butter, salt and pepper

Sushi Rice … how to prepare it

Ingredients

5 bowl cooked sushi rice

1½ bowl sushi vinegar

Preparation of Rice

1. Wash thoroughly 5 cups of sushi white rice.

Preparation of Vinegar

Ingredients

375 g sugar

600 g vinegar

18 g salt

Method

Mix the vinegar, salt and sugar in a pot and bring to boil till sugar and salt melted.

Leave the vinegar to cool before using.

Preparation of Sushi Rice

1. Put 5 bowls of cooked rice in a large bowl and 1½ bowl of vinegar.

2. Mix well with a ladle and fan it till cool.

3 eggs congee

Preparation Time: 15 mins

Cooking Time: 20 mins (less cooking of congee/Porridge)

Serving for 3 – 4

Ingredients

1 salted egg

1 century egg

1 fresh egg

200 g lean pork

1 dried scallop

1 tsp sesame oil

pepper

Fried shallot

Method:

1. Cook the salted egg. Cut the salted in small pieces.

2. Cut the century egg in pieces.

3. Slice the lean meat and add in the congee.

4. Add the eggs in the porridge/congee. Break the fresh egg, beat and add in congee/porridge before serving.

5. Add oil and shallot before serving. Add soy sauce to taste if needed.

Basic Porridge or Congee

Preparation Time: 10 mins

Cooking Time: 1 to 2 hours (using slow cooker)

Serving for 3 – 4

Ingredients

2 cups of rice

4 cubes of rock sugar (small square ones)

Method:

1. Wash rice, add sugar and add 5 bowls of hot water

2. Cook using a slow cooker. Once boil, use a ladle to stir the rice till soft.

3. The texture of the congee or porridge has to be smooth, thick and rich (Until the rice grain all meshed up).

Note: The rock sugar enables the congee/porridge to have a smoother texture.

Eat Healthy…Red Unpolished Rice

Cooking Time: 30 mins

Preparation Time: 20 mins

Serving for 2

Ingredients

5 g dried groundnuts

1 dried scallop

2 cloves of garlic

2 dried mushroom

½ tsp pepper

1 Tbsp sesame oil

1 tsp pepper

2 cups of unpolished rice

 

Method:

1. Chopped garlic and minced it

2. Soak groundnut, scallop and mushroom (slice about 2 mm thick) for 20 mins

3. Add water to rice with salt, sesame oil, garlic, groundnut, scallop and mushroom and cook it in a rice cooker

Yam Rice

Preparation and cooking time: 30 mins

Serving for 2 – 3 persons

Ingredients

2 cups of rice

3 shallots

1 clove of garlic

100 g dried shrimp

100 g prawns

200 g lean pork (optional)

1 yam about 200 g (taste excellent if u could get it imported from Thailand)

50 g dried shitake mushroom

10 g fried peanuts (optional)

1 dried scallop

1 tsp salt

Cooking oil

2 tsp sesame oil

1 tsp 5 spice powder

1 Tbsp dark soy sauce

1 tsp light soy sauce

Method

1. Cut the yam in cubes and marinate the yam with the 5 spice powder for 10 minutes. Deep fried the yam.


2. Wash the rice and cook it in a rice cooker. Once cooked, transfer the rice in a container to let it cool.


3. Fry the shallots with the garlic till brown. Remove the fried shallot and garlic for garnishing later. Leave the oil in the wok to fry the dried shrimp, mushroom and scallop.


4. Add the lean pork and prawn and fry about 5 minutes. Add light soy sauce in the mixture. Remove the dried shrimp, mushroom, scallop, lean pork and prawn.


5. Add the rice in the wok and if required add a little oil to fry the rice.


6. Add salt and dark soy sauce on the rice and fry for about 10 minutes.


7. Add the yam with the mixture of dried shrimp, mushroom, scallop, lean pork and prawn.


8. Fry till there is a nice aroma, add sesame oil to enhance the fragrance.


9. Add the fried shallot and garlic to garnish.


10. It is ready to serve, optional to add some fried peanuts if you like.

Fried Rice Paradise

Preparation Time: 20 mins (excluding cooking the rice)

Cooking Time: 30 – 40 mins

Serving for 2 persons

Ingredients

3 Bowls of Rice (Preferably cooked and left overnight)

3 Shallots

1 clove of garlic

3 Tbsp of Cooking Oil

1 tsp of Salt

1 tsp of Light Soy Sauce

1 tsp of Sesame Oil

50g of Ham Luncheon Meat or Ham

5 Large Prawns

1 Stalk of Spring Onions (Optional)

Pepper for taste

2 Large Eggs

Preparation of Rice

1. Beat the eggs with 1/2 tsp of Light Soy Sauce.

2. Mix the eggs with the rice.

Preparation of Prawns

1. De-shell the prawns and cut it in large chunks.

2. Wash the prawns with 1/2 tsp of salt.

Method

1. Cut the shallots and garlic in slices.

2. Cut the spring onions.

3. Cut the Ham Lucheon Meat/Ham in chunks.

4. Heat the wok with 1 Tbsp of oil. Add the shallot, garlic and stir fry till lightly brown. Remove the shallots and garlic for garnishing before serving.

5. Add 1 Tbsp of oil with prawns, lucheon meat/ham and stir fry for 2 mins.

6. Add 1 Tbsp of oil with rice and stir fry till the rice is fluffy and light.

7. Add 1/2 tsp of salt and light soy sauce and stir fry for another 1 min.

8. Add sesame oil and pepper and stir fry for another 1 min.

9. Add the spring onions before serving.

Alternative method to coat every rice grain with egg:

1. Add egg mixture in wok and rice. Stir fry quickly to ensure each rice is coated with egg mixture.
