Chicken with sour cream

Preparation Time: 40 mins

Serving for 4 – 6 persons

Cooking Time: 20 mins

Ingredients

250 ml sour cream

300g boneless chicken thighs

1 tsp cooking wine

2 tsp salt

pepper to taste

2 tsp mixed herbs or Italian herbs

2 large onions

5 cloves garlic

2 Tbsp butter

1 Tbsp cooking oil

Method

1 Diced chicken and marinate with cooking wine, salt and pepper for 5 mins.

2. Chopped the onions and minced the garlic and saute with butter and oil for 15 mins till soft and slightly brown.

2. Add diced chicken and stir fry for 15 mins with the onion and garlic.

3. Add 2 Tbsp of water and cook for 2 mins.

4. Add sour cream and stir for 10 mins.

5. Add herbs and cook at low heat and simmer for another 15 mins.

Chestnuts Braised Duck

Preparation Time: 30 mins

Cooking Time: 2 hours

Serving for 4 persons

Ingredients

Half a duck

1 stick of cinnamon

1 star anise

3 cloves

1 cardamon seed

2 slices of ginger

10 to 15 of pepper seeds crushed

3 Tbsp dark soya sauce

3 bowls of water

1 tsp sesame oil

400 – 500 g chestnuts

Method

1. Wash and scald duck with hot water. Rub it with 1 tsp of five spices powder to marinate for 30 mins.

2. Bowl the chestnuts for about 30 mins remove and soak in cold water. Remove the skin.

3. Bowl the water and add the dark soya sauce, sesame oil, ginger, pepper, cardamon, star anise, cinnamon stick and cloves. Add chestnuts and cook for 30 mins.

4. Add duck and bring it to a boil, lower the heat and let it simmer for 30 mins.

5. Cook at low heat for another 1 hour before serving.

Steam chicken with ham

Preparation Time: 20 mins

Cooking Time: 30 mins

Serving for 2 – 3 persons

Ingredients

2 medium drumsticks

3 slices of ginger slice into strips

1 chilli slice into strips

2 tsp sesame oil

1 tsp light soya sauce

pepper to taste

1 Tbsp water

1 piece of ham slice in strips

Method

1. Wash the drumsticks with salt, drain and drip dry it. Otherwise use a paper towel to dry the drumsticks.

2. Lay the drumsticks on a plate, add soy sauce, pepper to marinate for 10 mins.

3. Add sesame oil and put ham, ginger and chilli.

4. Heat the wok with water to steam the drumsticks for 30 mins.

Corned beef with cabbage

Preparation Time: 20 mins

Cooking Time: 20 mins

Servings for 2

Ingredients

Half a cabbage

1 slice of ginger

1 onion

1 green chilli

3 limes

1 can of corned beef

1 tsp salt

2 tsp sugar

Method

1. Cut onions, ginger, cabbage, green chilli

2. Soak cabbage in water to clean them

3. Mix the onions, ginger, green chilli with lime juice

4. Heat wok with 3 Tbsp of cooking oil and stir fry the onions, ginger and green chilli for 5 mins

5. Add cabbage and stir fry for 10 mins

6. Add corned beef, add sugar, salt and a dash of pepper and stir fry for another 5 mins

7. Best serve with rice

Beef Balls soup

Preparation Time: 20 mins

Marinating Time: 30 mins

Cooking Time: 15 mins

Servings for 2

Ingredients

100g minced beef

50g minced pork

1 packet of tung feng (small)

1 Tbsp fried sole fish

1 tsp corn flour

½ a cube of Chicken cube

½ tsp light soy sauce

1 dash of pepper

1 Tbsp shallot oil

1 Tbsp sesame oil

6 – 8 Sotong Balls (optional)

Method

1. Mixed pork and beef, add fried sole fish, pepper, soy sauce, sesame oil and corn flour to marinate for 30 mins

2. Heat 2 bowls of water and add chicken cube to boil

3. Soak tung feng for 2 mins, remove water and add boiled chicken stock in tung feng for 1 min

4. Make meat mixture in balls and add in soup

5. Add Sotong Balls and tung feng bring to boil before serving

Stir fry chicken with bamboo shoots

Preparation Time: 20 mins

Cooking Time: 20 mins

Servings for 2 – 4 persons

Ingredients

300g Chicken Breast/Thigh cut into slices

1 tsp lemon juice

2 tsp chopped or grated ginger

1 clove of garlic crushed

1 Tbsp light soy sauce

1 Tbsp Shao Xing Chinese rice wine

1 tsp sesame oil

4 fresh Shitake mushroom sliced

1 piece of bamboo shoot (canned type)

1 Green pepper, cut into strips

Method

1. Marinate chicken with ginger, rice wine, light soy sauce, lemon juice for 15 mins

2. Heat wok and add 2 Tbsp of cooking oil, add garlic and stir fry till lightly brown

3. Add shitake mushroom and fry for about 3 mins, add green pepper and bamboo shoot (thinly sliced) and fry for about 10 mins

4. Add sesame oil and a dash of pepper before serving

Fried chicken parts….you mean wasabi???

Preparation Time: 1 hour

Cooking Time: 20 mins

Serving for 2 – 3

Ingredients

3 – 4 large drumsticks or thighs

2 Tbsp Wasabi (powder)

1 tsp salt

1 Tbsp sesame oil

1 minced garlic

Pepper to taste

Method

1. Wash the drumsticks/thighs with salt and use a paper towel to dry them

2. Seasoned the drumsticks/thighs with salt, minced garlic, pepper and wasabi powder for 45 mins

3. Add sesame oil and marinate another 10 mins

4. Heat wok and deep fry the chicken parts

Fried Chicken…Italian?

Preparation Time: 1 hr 15 mins

Cooking Time: 20 mins

Serving for 2 persons

Ingredients

2 X 150g Boneless Chicken Thigh

1 tsp Honey

1 tsp Italian Herbs

1 tsp Light Soy Sauce

1 Tbsp Sesame Oil or Olive Oil

Dash of Pepper

1 tsp Rosemary

1 tsp Tarragon

1 Tbsp Corn Flour

Method

1. Wash Chicken and marinate with Honey, Italian Herbs, Light Soy Sauce, Rosemary, Tarragon, Sesame Oil and Corn Flour

2. Wrap the Chicken and put in the refrigerator for 1 hour

3. Heat wok with cooking oil and fry each side of the Chicken for 10 mins till brown

4. Serve with rice

Pork with ginger

Preparation Time: 20 mins

Cooking Time: 15 mins

Serving for 2 – 3 persons

Ingredient

300g Lean Pork

5 slices of ginger

1 Tbsp Dark Soy Sauce

1 tsp Oyster Sauce

½ tsp salt

1 Tbsp corn flour

Dash of Sesame oil

Dash of Pepper

Half a cup of water

Method

1. Slice lean pork in thin slice of 4 X 2 X 1 cm and marinate with salt and corn flour for 5 mins


2. Slice ginger in strips

3. Heat wok, add cooking oil and add ginger, fry till aroma

4. Mixed dark soy sauce, oyster sauce and water

4. Add pork and stir fry for 5 mins, add dark soy sauce, oyster sauce mixture and stir fry for another 5 mins

5. Before serving add sesame oil and pepper

Oyster sauce Chicken

Preparation Time: 20 mins

Cooking Time: 15 mins

Servings for 2 – 3 persons

Ingredients

300g Chicken breast or thigh

1 Tbsp oyster sauce

½ tsp salt

1 tsp sesame oil

2 cloves of garlic (minced)

1 tsp minced ginger

Method

1. Slice the meat about 3 cm long and ½ cm thick

2. Marinate the check with salt, sesame oil for 10 mins

3. Heat wok, add oil, garlic and fry till lightly brown

4. Add ginger and fry a little till the aroma

5. Put the chicken and stir fry for about 5 mins before adding the oyster sauce

6. Add 2 Tbsp of water and stir fry for another 10 mins
