Go Nuts with Cashew…

Preparation Time: 2 hours

Baking Time: 20 mins at 250 degree celcius per tray

Ingredients

2 lbs flour

11 oz butter

5 oz margarine

2 eggs

½ lbs sugar

1 lb cashew nuts clean and half it

1 tsp bicarbonate soda

3 oz ground cashew nuts

Preparation of ground cashew nuts

1. Heat oven at 250 degrees celcius.

2. Put the ground cashew nuts on an aluminium foil and heat them till slightly brown .

3. Take out and cool it.

Preparation of cookie dough

1. Cut butter in small chunks 1 X 1 cm cubes, mix them with the margarine and sugar.

2. Sieve the flour with soda and add the ground cashew nuts on the butter mixture.

3. Mix the dough mixture with one egg until it can be roll using a rolling pin.

4. Use a cashew nut mould and cut the rolled out dough at about 3 mm thick.

5. Place the chopped almonds on the cutout dough and spread egg fluid over the biscuit.

6. Bake the cookies at 250 degrees for about 20 mins.

Sugee

Bake Time: 2o minutes at 250 degrees

Preparation Time: 20 minutes

Ingredients

13 ounces sugar

250g Ghee (use the brand QBB)

1 kg flour

1 tsp bicarbonate soda

Method

1. Sieve the flour and bicarbonate soda together.

2. Add the ghee and knead well.

3. Mould out spherical pieces and line them up on a lightly greased tray.

4. Bake for approximately 20 minutes.

Shortbread

Bake Time: 20 mins at 250 degrees

Preparation Time: 20 mins

Ingredients

125g caster sugar

4 level dessertspoon ground rice flour

400g plain flour

250g butter

Method

1. Heat the oven at 250 degrees.
2. Cream sugar and butter.

3. Add flour and ground rice flour gradually.

4. Roll out and cut the dough using an one 1 inch diameter round mould.

5. Put the cut out dough and lay them on a lightly greased tray.

6. Put the tray in the oven and bake for 20 minutes.

Heavenly Almond

Preparation and baking time….hours :o )

This is 1 portion, increase portion if you intend to make more…don’t ask me how many you could make. This is because it depends on the size you are making. Enjoy!

Ingredients

16 ounces flour

6 ounce icing sugar

½ tsp salt

2 tsp baking powder

3 tsp bicarbonate soda

3 ounces grounded almonds

2 ounces chopped almonds for decorating

1½ bowl corn/maize oil (diameter 4.5″ or 11.5 cm)

1 egg

Preparation of Grounded Almonds

1. Ground the Almonds till fairly fine.

2. Heat oven and bake the almond till you smell the aroma, be careful not to over cooked the almonds. Leave it to cool.

Method

1. Sieve flour, baking powder, bicarbonate soda, salt and icing sugar.

2. Add almond (grounded) into flour mixture.

3. Make a ‘bird nest’ and add 1 bowl of corn oil and mix. Now followed by another ¼ bowl of corn oil. Mix till flour with the oil till it becomes a dough.

Important: Check the texture of the dough to ensure it is not too wet. If still dry, add the last ¼ bowl of corn oil.

4. Knead well and mould out spherical (round balls) shape. Line them up on the baking tray (apply lightly corn oil on baking tray).

5. Place the chopped almonds on the spherical dough and spread egg fluid over the biscuit.

6. Bake at 250 for approximately 20 minutes.
