Cheezzzzzz Cake

Preparation Time: 30 mins

Serving for 10 persons

Ingredients

8 oz cream cheese

half cup sugar

250 ml sour cream

4 tsp gelatine

450 g crushed pineapple

10 – 12 Digestive biscuits

3 oz melted butter

Method for base

1. Crushed biscuits into fine pieces.

2. Spread on tin base and add melted butter.

3. To speed up the process, put the base in the fridge for 15 mins.

Method for Cream Cheese

1. Cream cheese with sugar.

2. Add quarter cup of hot water to gelatine.

3. Add sour cream and pineapple crush to cream cheese.

4. Mix it well and add gelatine.

5. Pour over the tin with the biscuit base.

For tastier base, add 50g of roasted crushed unsalted cashew nuts.

Fish Maw with Bok Choy Soup

Preparation Time: 40 mins

Cooking Time: 40 mins

Serving for 2 – 3 persons

Ingredients

6 pieces of pork ribs

1 piece of chicken carcass or 2 drumstick bones

1 small bok choy or half a big bok choy (cut in pieces of about 2 X 1 inch)

3 garlic minced

15 fish balls

5 pieces of dried shark’s maw and cut them in small chunks (soaked with hot water to softened and wash with water)

30 strips of fresh Cordecep Roots (Optional)

salt to taste

Method

1. Boil water and scald the pork ribs. Wash with water and put it aside.

2. Boil water, add scalded pork ribs and chicken carcass to cook soup. Cook for 20 mins.

3. Heat up wok and 3 Tbsp cooking oil to fry garlic till light brown, add Bok Choy to stir fry for 10 mins. Add water till Bok Choy is semi softened.

4. Add the fish maw in the soup base and boil for 2 mins.

5. Add the Bok Choy and boil for 2 mins.

6. Add the fish balls and boil for 1 min.

7. Finally lower the heat and simmer for 5 mins.

Steam chicken with ham

Preparation Time: 20 mins

Cooking Time: 30 mins

Serving for 2 – 3 persons

Ingredients

2 medium drumsticks

3 slices of ginger slice into strips

1 chilli slice into strips

2 tsp sesame oil

1 tsp light soya sauce

pepper to taste

1 Tbsp water

1 piece of ham slice in strips

Method

1. Wash the drumsticks with salt, drain and drip dry it. Otherwise use a paper towel to dry the drumsticks.

2. Lay the drumsticks on a plate, add soy sauce, pepper to marinate for 10 mins.

3. Add sesame oil and put ham, ginger and chilli.

4. Heat the wok with water to steam the drumsticks for 30 mins.
