Fried chicken parts….you mean wasabi???

Preparation Time: 1 hour

Cooking Time: 20 mins

Serving for 2 – 3

Ingredients

3 – 4 large drumsticks or thighs

2 Tbsp Wasabi (powder)

1 tsp salt

1 Tbsp sesame oil

1 minced garlic

Pepper to taste

Method

1. Wash the drumsticks/thighs with salt and use a paper towel to dry them

2. Seasoned the drumsticks/thighs with salt, minced garlic, pepper and wasabi powder for 45 mins

3. Add sesame oil and marinate another 10 mins

4. Heat wok and deep fry the chicken parts

Meshed Potato….ala yummy

Preparation Time: 10 mins

Cooking Time: 40 mins

Serving for 2 – 4 persons

Ingredients

4 large potatoes

10g – 20g butter (depending on the texture of your potatoes)

2 tsp salt

Pepper to taste

Method

1. Cut the centre of the potatoes’ skin. This will enable easy removable when cooked

2. Heat water and add potatoes and cook for about 40 mins. To check if cooked, used a fork or toothpick to prick

3. After potatoes are cooked, soaked in ice cold water to remove the skin

4. Use a fork to mesh the potatoes, add butter, salt and pepper

Fried Chicken…Italian?

Preparation Time: 1 hr 15 mins

Cooking Time: 20 mins

Serving for 2 persons

Ingredients

2 X 150g Boneless Chicken Thigh

1 tsp Honey

1 tsp Italian Herbs

1 tsp Light Soy Sauce

1 Tbsp Sesame Oil or Olive Oil

Dash of Pepper

1 tsp Rosemary

1 tsp Tarragon

1 Tbsp Corn Flour

Method

1. Wash Chicken and marinate with Honey, Italian Herbs, Light Soy Sauce, Rosemary, Tarragon, Sesame Oil and Corn Flour

2. Wrap the Chicken and put in the refrigerator for 1 hour

3. Heat wok with cooking oil and fry each side of the Chicken for 10 mins till brown

4. Serve with rice

Sze Chuan Vegetable Soup

Preparation Time: 20 mins

Cooking Time: 40 mins

Serving for 2 – 4 persons

Ingredients

300g Pork Ribs

1 Sze Chuan Vegetable

2 Tomatoes

2 slices of Ginger

Method

1. Wash pork ribs and blenched it with boiling water

2. Heat 3 bowls of water and add pork ribs to cook for 20 mins

3. Wash the Sze Chuan Vegetable and remove the outer skin. Slice the vegetable about 2 to 3 mm thick

4. Cut the tomatoes into 4 quarters

5. Add the vegetable, ginger and tomatoes in the soup with the pork ribs and cook for another 10 mins

Pork with ginger

Preparation Time: 20 mins

Cooking Time: 15 mins

Serving for 2 – 3 persons

Ingredient

300g Lean Pork

5 slices of ginger

1 Tbsp Dark Soy Sauce

1 tsp Oyster Sauce

½ tsp salt

1 Tbsp corn flour

Dash of Sesame oil

Dash of Pepper

Half a cup of water

Method

1. Slice lean pork in thin slice of 4 X 2 X 1 cm and marinate with salt and corn flour for 5 mins


2. Slice ginger in strips

3. Heat wok, add cooking oil and add ginger, fry till aroma

4. Mixed dark soy sauce, oyster sauce and water

4. Add pork and stir fry for 5 mins, add dark soy sauce, oyster sauce mixture and stir fry for another 5 mins

5. Before serving add sesame oil and pepper

Tips and Tricks to cook great Congee or Porridge

If you like you porridge or congee to be smooth…. add a little rock sugar. This will enhance the texture of it to be smooth and nice.

If you like it healthy, I would substitute with honey. It gives the same awesome smooth texture.

Always use boiling water to cook porridge and never cold water.
