Pumpkin Soup….chinese style
Preparation Time: 30 mins
Cooking Time: 1 hour
Serving for 2 – 3 persons
Ingredients
300g pork ribs
400g pumpkin
1 tsp salt
Method
1. Wash pumpkin, remove skin and cut them in cubes of size 4 cm X 4 cm thick
2. Wash pork ribs and blenched in boiling water
3. Boil water with pork ribs for 10 mins at high heat then low heat for another 20 mins
4. Add pumpkin in the soup base and cook for another 30 mins till soft
Black beans soup
Preparation Time: 60 mins
Cooking Time: 60 mins
Serving for 3 to 4
Ingredients
300g Pork ribs
200g Black Beans
2 tsp salt
Method
1. Wash and the black beans
2. Wash the pork ribs and blenched in boiling water. Remove and drain them
3. Boil 5 bowls of water, add salt, pork ribs and black beans for 60 mins at low heat
4. Serve with a dash of pepper and sesame oil
“Sharkfins” melon soup
Preparation Time: 60 mins
Cooking Time: 60 mins
Serving for 3 to 4
Ingredients
300g Pork ribs
1 dried scallop
1 “sharkfins” melon
1 tsp salt
Method
1. Soak the dried scallop for 1 hour till soft and use your fingers to split the scallop into shredded pieces
2. Wash the pork ribs and blenched in boiling water. Remove and drain them
3. Boil 5 bowls of water, add salt, pork ribs and scallop for 50 mins at low heat
4. Boil the “sharkfins” melon for 30 mins till soft. Remove and cut the melon in half. Use a fork to scrap the melon off the skin. Drain the melon over a sieve
5. Add the melon in the soup at low hear to simmer for another 10 mins
6. Serve with a dash of pepper and sesame oil
Fisherman’s Village tofu
Preparation Time: 30 mins
Cooking Time: 15 mins
Servings for 4 to 5
Ingredients
400 g prawns
1 tube tofu
1 salted egg
2 Tbsp oyster sauce
½ cup of water
1½ Tbsp corn starch
2 tsp salt
½ tsp sugar
Method
1. Remove the shell from the prawns, mix some salt and rinse it off
2. Use the blade of a chopper to press on the prawns to mince them till in a paste
3. Marinate with 1 tsp salt, and sugar for 10 mins
4. Cut the tofu each about 2 cm thick and use either a melon scoop or teaspoon to remove the centre of each tofu like a little well
5. Lay the tofu on a plate and on each well sprinkle some corn starch
6. Scoop the prawn paste and put it on top of the tofu
7. Break the fresh salted egg and drain off the egg white in a bowl, minced the egg yolk and lay on top of each prawn paste
8. Heat wok and heat the mixture containing water with oyster sauce and sugar
9. Pour the egg white around the tofu and put it in a steamer and steam for 15 mins
10. Pour the warm oyster sauce mixture around the tofu
Oyster sauce Chicken
Preparation Time: 20 mins
Cooking Time: 15 mins
Servings for 2 – 3 persons
Ingredients
300g Chicken breast or thigh
1 Tbsp oyster sauce
½ tsp salt
1 tsp sesame oil
2 cloves of garlic (minced)
1 tsp minced ginger
Method
1. Slice the meat about 3 cm long and ½ cm thick
2. Marinate the check with salt, sesame oil for 10 mins
3. Heat wok, add oil, garlic and fry till lightly brown
4. Add ginger and fry a little till the aroma
5. Put the chicken and stir fry for about 5 mins before adding the oyster sauce
6. Add 2 Tbsp of water and stir fry for another 10 mins
Scrambled eggs
If you think scrambled eggs is easy to make….
Preparation Time: 3 mins
Cooking Time: 5 – 8 mins
Serving for 2 – 3 persons
Ingredients
3 eggs
3 Tbsp milk or cream
2 Tbsp cooking oil or butter
Method
1. Beat eggs with a fork
2. Heat non-stick pan (low heat) and add oil or butter
3. Add egg and use a spatula to drag the egg mixture to the centre of the pan and continue to move it around the pan
4. Once it curdle up add milk or cream
Best serve with toast bread spread with butter
Tips and Tricks….
How to peel a tomato?
1. Cut the two (2) ends like a plus (+) or a X
2. Boil the water and put the tomato in it. Do not add too many because you do not want to overcook them
3. Prepare a bowl with ice cold water. You can add ice in the bowl of water
4. Once you see the ends peel off, remove the tomato and put in the cold water for 10 to 25 secs
5. Remove the tomato and peel off from the ends
How to bake perfect crispy skin and fluffy potato?
1. Brush the skin of the potato with butter or oil and sprinkle some salt over it
2. Heat the oven at 190 degree and put the potato in the oven for 1 to 2 hours depending on the size
3. Cut the potato into half and use the fork to loosen the potato
4. Add butter, sour cream and bacon bits
Cream Cheese Pound Cake
Preparation Time: 15 mins
Baking Time: 60 mins
Ingredients
3½ cups self raising flour
1½ cups sugar
6 eggs
8 oz cream cheese
¾ cup butter
1 tsp vanilla essence
A pinch of salt
Method
1. Sieve the flour into a mixing bowl
2. Add sugar, eggs, cream cheese, butter, salt and vanilla essence
3. Mix well and beat using a mixer at low speed for 5 mins
4. Heat the oven
5. Pour the mixture in a 9 inch tray and bake for 60 mins or until centre is firm
6. Use a stainless steel pin to check to make sure the centre of the cake is well baked
Chicken bits…
Preparation Time: 20 mins
Cooking Time: 15 mins
Serving for 2
Ingredients
250 g chicken breast meat
½ tsp powdered garlic with no salt
A pinch of sea salt
½ tsp rosemary
Dash of black pepper
2 tsp Extra Virgin Olive Oil
Method
1. Cut chicken in cubes of about 2 cm X 2 cm
2. Marinate with powdered garlic, salt, rosemary, pepper for 10 mins
3. Add Olive oil and marinate for another 5 mins
4. Heat wok and add about 1 Tbsp of Olive Oil
5. Fry chicken each side for about 5 to 7 mins depending on thickness of chicken cubes
Best eaten with rice or noodles
Stir Fried Pasta….easy and yummy
Preparation Time: 10 mins
Cooking Time: 30 mins
Serving for 2 – 3 persons
Ingredients
50 g chicken breast
2 large fresh button mushroom
2 bowls of pasta (large shells shapes)
1 Tbsp butter
1 Tbsp Olive oil extra virgin
1 tsp Italian herbs
1 Tbsp salt
3 Tbsp of pasta tomato sauce
Method
1. Boil water with salt. Add pasta and cook for 20 mins. Drain and mix with butter.
2. Heat wok and add olive oil
3. Cut chicken breast in strips, marinate with a pinch of salt and pepper for 10 mins
4. Stir fry mushroom and chicken breast
5. Add pasta and stir fry for 2 mins and add pasta sauce
6. Sprinkle Italian herbs before serving
