Butter Cake

Baking Time: 30 – 45 mins at 250 degrees

Preparation Time: 1 hour 10 mins

Ingredients

250 g butter

200 to 250 g sugar (depends on your sweet tooth …. :p)

250 g eggs

250 g self raising flour

1 tsp vanilla essence

Method

1. Cut butter into cubes and add sugar in mixing bowl

2. Beat mixture at medium speed for 1 hour till light and creamy

3. Beat eggs, add in butter mixture with vanilla essence and beat for another 2 mins

4. Sift flour and fold in the mixture

5. Heat oven at 250 degrees before baking cake for at least 45 mins

Prawns with Tomato sauce

Cooking Time: 15 mins

Preparation Time: 30 mins

Serving for 2 – 3

Ingredients

1 large onion

1 tomato

250 g medium size prawns

2 Tbsp Tomato sauce

1 Tbsp water

1 tsp salt

Method

1. Wash, remove the prawn shell and marinate with a dash of salt and pepper for 10 mins

2. Cut onion and tomato in cubes

3. Heat the wok with cooking oil, add prawns, water, tomato sauce and salt to stir fry

4. Add a dash of sesame oil before serving

Panfried Salmon with Leek

Cooking Time: 20 mins

Preparation Time: 15 mins

Serving for 2 – 3

Ingredients

3 leeks stem

300 g Salmon fillet

1 tsp salt

dash of pepper

1 tsp sesame oil

½ tsp light soy sauce

¼ tsp corn starchMethod

1. Wash, remove skin and bones of salmon

2. Marinate with salt and pepper for about 10 mins

3. Slice the leek stem

4. Panfried at low heat the salmon

5. Add half a cup of water in hot wok with leek. Cook leek till soft then add soy sauce and sesame oil. Cook for about another 5 mins add corn starch to thicken

6. Pour the leek over the salmon before serving

Cabbage wraps in soup

Cooking Time: 45 mins

Preparation Time: 1 hour

Serving for 3 – 4

Ingredients

1 medium cabbage (from China because they are sweeter)

300g minced pork

200g medium size prawns

5 – 8 water chestnuts

1 medium size carrot

2 tsp sesame oil

1 tsp light soy sauce

1 pinch of salt

1 clove finely chopped garlic

300g pork ribs

dash of pepper

2 tsp corn flour

5 shallot

Preparation of cabbage wraps

1. Wash, peel off cabbage leaves, cut and remove the stem. Soak the cabbage in hot water to soften it

2. Peel the water chestnuts, carrot and chopped them finely

3. Peel off the shell of the prawns and chopped in small cubes. Add a pinch of salt to marinate it for 5 mins

4. Add soy sauce, prawns, chopped chestnuts, corn flour and carrot in meat to marinate for 15 mins. Add sesame oil and marinate for another 5 mins

5. Take out cabbage leaves, add pork mixture and wrap it about 2 X 1 inches

5. Heat your steamer or wok to cook the cabbage wraps for about 15 mins. Brush to coat the cabbage wraps with the garlic oil

Preparation of Soup

1. Heat wok and add minced garlic, shallot to 5 – 6 Tbps cooking oil. Cook till lightly brown then remove to cool the oil and garlic

2. Blenched the pork ribs for 30 sec in boiling water and remove

3. Add 4 bowls of water till boil and add the ribs to cook for 30 mins at high heat then lower heat to simmer for another 10 – 15 mins

4. Put cooked cabbage wraps in a bowl and add soup with a dash of pepper with fried garlic and shallot before serving

Mango Tango Salad

Preparation Time: 15 mins

Serving for 4 -5

Ingredients

2 large mangoes (Australian Mango)

2 Tbsp plum sauce

2 tsp finely chopped roasted almonds

Method

1. Peel and slice the mangoes

2. Add sour plum and garnish with almonds

Eat Healthy…Red Unpolished Rice

Cooking Time: 30 mins

Preparation Time: 20 mins

Serving for 2

Ingredients

5 g dried groundnuts

1 dried scallop

2 cloves of garlic

2 dried mushroom

½ tsp pepper

1 Tbsp sesame oil

1 tsp pepper

2 cups of unpolished rice

 

Method:

1. Chopped garlic and minced it

2. Soak groundnut, scallop and mushroom (slice about 2 mm thick) for 20 mins

3. Add water to rice with salt, sesame oil, garlic, groundnut, scallop and mushroom and cook it in a rice cooker

Grandma’s Pork Chop

Cooking Time: 40 mins

Preparation Time: 20 mins

Serving for 3 – 4 persons

Ingredients

300 g lean pork

2 potatoes

1 large onion

2 tsp cooking oil

1 tsp sesame oil

a dash of pepper

1 clove of garlic

2 tsp dark soy sauce

3 Tbsp water

1 tsp salt

2 tsp corn starch

Method

1. Cut pork in slice of 2 – 3 mm thick. Marinate pork with salt, pepper, 2 tsp corn starch and sesame oil for 10 mins

2. Cut onion in slices and chop garlic. Heat oil and saute onion and garlic till lightly brown

3. Slice potatoes and deep fry.

4. Add pork and stir fry with dark soy sauce for about 20 mins. Add potatoes, water and cover with a lid. Cook for another 20 mins at low heat

5. Add 1 tsp corn starch mixed with 1 Tbsp of water for thicken

East Meets West…Salad

Preparation Time: 20 mins

Serving for 2 – 4

Ingredients

2 large tomatoes

Half a lettuce

2 potatoes (USA)

3 cloves of garlic

2 Tbsp sesame oil

2 tsp Italian Herbs

1 tsp of grounded almond

Method

1. Cut and chop garlic. Fry with oil till light brown

2. Cut tomatoes in cubes about 1 cm X 1 cm

3. Boil water and cook potatoes for about 15 mins. Cut the skin in the centre of the potato, this would help you to remove the skin when potatoes are cooked. Use a fork and poke the potatoes to test if they are cooked

4. Cut the potatoes in cubes about 1 cm X 1 cm

5. Wash the lettuce and cut them in slices

6. Put the tomatoes, potatoes, lettuce in a salad bowl. Add garlic, almonds, sesame oil and toss the vegetables

7. Put in refrigerator to chill before serving

Winter Melon Soup

Cooking Time: 1 hour (low heat)

Preparation Time: 20 mins

Serving for 3 – 4 persons

Ingredients

300 g pork ribs

200 g winter melon

1 tsp salt

1 Tbsp light soy sauce

1 tsp pepper

1 dried scallop (soak the scallop for about 2 – 3 hours will soft)

Method

1. Wash the pork ribs with salt and blenched it over boiling water for about 30 secs

2. Boil 4 bowls of water in a pot and add the pork ribs

3. Add the soften scallop together with the water

4. Cut the melon in cubes, remove the skin

5. Cook at low heat for at least an hour

6. Add soy sauce and pepper before serving

Stew….chicken or beef

Cooking Time: 2 hours

Preparation Time: 30 mins

Serving for 2

Ingredients

1 large onion

1 carrot

2 potatoes (preferable from US)

2 tomatoes

2 chicken drumstick (remove the skin) or 200g beef cubes

2 – 3 Tbsp Italian Herbs

1 tsp pepper

1 tsp salt

4 – 5 cups of chicken stock/water

2 Tbsp red wine

1 tsp olive oil

Preparation

1. Cut potatoes, carrots, tomatoes and onions in cubes.

2. Put all the vegetables in the chicken stocks and cook for 30 mins.

3. Add chicken or beef cubes and cook for another 20 mins.

4. Lower heat to simmer and add pepper, herbs, red wine and salt to cook for another 10 mins.

5. Add olive oil and simmer the stew at the lowest flame for another 1 hour before serving.

Important: For storage of stew; keep it refrigerated but must finished within 2 days.
